Grilled Peaches with Burrata Delight (Printable Version)

# What You'll Need:

→ Salad

01 - 3 ripe peaches, halved and pitted
02 - 2 balls (about 7 oz) fresh burrata cheese
03 - 4 cups arugula or mixed greens
04 - 1/4 cup toasted pistachios or walnuts
05 - 8–10 fresh basil leaves, torn

→ Dressing

06 - 2 tbsp extra virgin olive oil
07 - 1 tbsp honey
08 - 1 tbsp balsamic vinegar
09 - 1/2 tsp Dijon mustard
10 - Salt and freshly ground black pepper, to taste

→ For Grilling

11 - 1 tbsp olive oil

# Method:

01 - Preheat a grill or grill pan to medium-high heat and brush the peach halves lightly with olive oil.
02 - Place the peaches, cut side down, on the grill and grill for 3–4 minutes per side until charred and caramelized. Remove and let cool slightly, then slice each half into wedges.
03 - In a small bowl, whisk together olive oil, honey, balsamic vinegar, Dijon mustard, salt, and pepper to create the dressing.
04 - Arrange the arugula or mixed greens on a serving platter and scatter the grilled peach slices on top.
05 - Tear the burrata into pieces and nestle among the peaches and greens.
06 - Drizzle with the honey dressing and sprinkle with toasted nuts and torn basil leaves.
07 - Serve immediately, garnished with extra black pepper if desired.
